Dr. T. Colin Campbell, Professor Emeritus at Cornell University, and author of "The China Study," has received recognition as one of the most comprehensive studies ever performed. The scope and magnitude of "The China Study" has gained national attention from many sources of media coverage ranging from print, radio, television, and online.
Before Dr. Campbell's famous "The China Study," his main was animal nutrition and the biochemistry of protein. He was interested in replicating an Indian study called "Carcinogenesis of Aflotoxin."He discovered that when rats were fed a diet of casein, the main protein in dairy, at 20 percent and 5 percent rates, there was a difference in the activation of cancer cells. He found that when casein was fed at 20 percent, it would turn on cancer cells and when decreased to 5 percent, cancer was not found. Essentially, animal protein is good at turning on cancer cells.
The problem lies in the fact that over time human consumption of animal protein far exceeds the 20 percent and leads to eventual deterioration of our health. It can be convincingly argued that cancer and heart disease, the two largest killers in America is caused by what we eat.
With the average American carrying around 23 extra pounds of fat, and every minute one person dying of heart disease, you can say that we Americans are sicker than ever. The United States spends about 2.2 trillion in healthcare and more people are dying of cancer every year.
How do we compare to other nations? Why is there such a significant difference in the number of cancer and heart disease statistics among Americans and Eastern nations? This is the second question that motivated Dr. Campbell.
His many years of research revealed that as we Americans increased our animal protein intake, heart disease and other chronic illnesses and diseases also increased. Dr. Campbell proved in "The China Study" that by adopting a whole foods plant based diet that the risk of heart disease, diabetes, cancers, and other chronic illnesses would be significantly reduced.
Dr. Caldwell Esselstyn, author of "Preventing and Reversing Heart Disease," and an internationally known surgeon, researcher, and clinician of the Cleveland Clinic, performed a 20-year long study, which revealed that a plant based oil free diet can actually repair damaged inner arterial walls reversing major cardiovascular disease, lowering blood pressure, cholesterol, and maintains that by eating a whole foods, plant based diet, that cardiac events were non-existent in the 12 compliant patients that remained in his study over the 20 year long research.
The same life changing results came from two different doctors with three different objectives. Dr. Esselstyn has performed numerous surgeries for a range of diseases, has seen the implications of an animal based protein and high fat diet.
He agrees with Dr. Campbell that when we consume dietary cholesterol, it stains our bloodstream with plaque and causes cardiovascular disease. Both doctors proved that by eating plant proteins, you could actually prevent and repair damage that is caused by eating refined, processed, and animal based foods.
