Tomato Jam Recipe - Healthy Way to Use Fresh Tomatoes

There is not a better time of the year than when you can eat a tomato fresh out of your garden or from a neighbors garden (probably a good idea to ask them first!).

While traveling for work last week, I stayed at a Radisson Hotel and when I ordered my breakfast sandwich, they offered the option of topping with tomato jam. It really turned a pedestrian sandwich into something special. After returning home and scanning recipies I found online, I came up with a winner in my humble opinion.

Tomato Jam

Ingredients

  • 5 tomatoes cored and chopped
  • 1 sweet onion chopped
  • 1 jalapeno pepper chopped
  • 3 tablespoons balsamic vinegar
  • 1 garlic clove
  • Salt and pepper

Directions

Add all ingredients to a saucepan, bring to boil, turn down heat and simmer until thickened - about an hour or so.

This basic recipe can obviously be doubled or tripled very easily. We are using the jam to put on sandwiches, as a dip with crackers and as a snack over cottage cheese - just delectable.
