Grilled cheese and tomato soup is one of my favorite meals. There is something about the delicious combination that is so comforting! I wanted the same effect today, but I'm going for something even yummier. I love this soup because we always have these ingredients on hand, and it's so easy to toss together. Gnocchi adds a delicious twist to a pretty basic soup.
Ingredients:

1 tsp olive oil

1 small onion, diced

2 Tbsp minced garlic

3 cups chicken (or beef) broth

2 (14.5 oz) cans diced tomatoes

1 (15 oz) can tomato sauce

1 (10 oz) package frozen chopped spinach

1 tsp salt
-
½ tsp pepper
-
1 tsp dried basil
-
1 tsp dried oregano
-
1 package prepared gnocchi (found in the pasta aisle of your supermarket)

Garnish: shredded Parmesan and fresh parsley
Directions:

Heat oil in a large pot, add onion and garlic; cook 2-3 minutes, or until soft or fragrant.

Mix in broth, tomatoes, and tomato sauce, reduce heat. Cover and simmer 30 minutes. Stir in spinach, salt, pepper, basil and oregano. Cover and simmer 10 minutes.

Turn heat back up to medium high, add in gnocchi and cook according to package directions.

When gnocchi is finished cooking, spoon into bowls and garnish. Serve warm.
