Tossed in a honey and pesto vinaigrette, this salad makes a great side dish to any entrée, or a light and healthy snack during the day. Add spinach or mixed greens, maybe some walnuts, or whatever you desire, to create an entirely new salad from the basic ingredients. Either way, it's definitely yummy.
Ingredients:
Dressing
- 1/4 cup fresh lime juice
- 2 tbsp rice wine vinegar
- 1 tbsp honey
- 1/4 cup cilantro, chopped
- 1/4 cup olive oil
- 1/4 cup canola oil
- Salt and pepper
Salad
- 4 large tomatoes, cut into chunks
- 2 large avocados, cut into chunks
- 1/2 cup red onion, chopped
- 1/4 cup cilantro, chopped
- 1 tsp ground cumin
- walnuts (optional)
- figs (optional)
- feta cheese (optional)
- spinach leaves (optional)
Directions:
Whisk together the lime juice, vinegar, honey, cumin seeds and cilantro in a medium bowl. Gradually whisk in the oils until emulsified. (Do not use a blender for this). Season with salt and pepper to taste. Set aside.
Gently mix the tomatoes, avocados and onion and half of the dressing in a large bowl. Check for seasoning and add more dressing, if needed. Serves 5. Makes a great side dish for glazed pork loin, or any other meat or fish meal.
