Tofu Ranch Dressing

It is Tasty Tuesday and time for a new, healthy recipe. There is something so decadent about ranch dressing. It brings up childhood memories of dipping carrot and celery sticks and is sometimes the only thing that will get kids to eat their vegetables.

Unfortunately, traditional ranch dressing has a mayonnaise base, is full of fat, calories, and artery clogging cholesterol. Most health conscious adults have given up eating ranch dressing because it is just too unhealthy.

If you miss being able to have your ranch dressing, the following recipe will delight you. This recipe from Dr. Joel Fuhrman's book, Eat to Live, is the healthy adults answer to delicious, decadent ranch dressing.

Tofu Ranch Dressing

Ingredients:

6 oz silken tofu
3 dates, pitted
1 clove of garlic, peeled
1/4 cup finely chopped green onion
3 Tbls water
2 Tbls fresh lemon juice
1 1/2 Tbls dried Italian Seasoning
1 Tbl chopped fresh parsley
1 Tbl chopped fresh dill
1 Tsp Bragg Liquid Aminos or low-sodium soy sauce
dash cayenne pepper (optional)

Blend all the ingredients in a high-powered blender or food processor until smooth and creamy.

*store in an airtight container in the refrigerator for up to 5 days.
