Toffee recipe: Rachael Ray’s chocolate covered toffee is so simple to make

This toffee has just the right crunch and is way too easy to eat. The chocolate and toffee together are melt-in-your-mouth good. Rachael Ray says this is one of her family’s favorites and you will see why. It’s easy to make and so delicious that everyone will love it. If you think about giving it away as a gift, better make extra for yourself!

Toffee is made by boiling sugar to the hard-crack stage. You will need a candy thermometer for this recipe. Although there are ways of telling what stage a candy mixture is at by dropping a little into cold water, it is so much easier to buy a thermometer – they are inexpensive and available nearly everywhere.

So that the recipe is the best it can be, make sure you use real butter and the best chocolate chips. Using the best ingredients always ensures the best results.

Rachael Ray’s Chocolate Toffee Recipe

Ingredients for Rachael Ray’s Chocolate Toffee:

  • 1 ¼ cups butter
  • 1 cup white sugar
  • ¼ cup brown sugar, packed
  • ¼ cup water
  • 1 tablespoon molasses
  • ½ tsp. cinnamon
  • 1 ¼ cups milk chocolate chips

Directions for making Rachael Ray’s Chocolate Toffee:

Line a baking sheet with parchment paper. (Use a large cookie sheet. The mixture hardens before it gets to the edges so don’t worry about containing it -- it just needs a place to harden.)

In a heavy saucepan over low heat, melt the butter. Add the sugars, the water, and the molasses – stir until the sugar dissolves.

Raise the heat to medium and clip a candy thermometer to the side of the pan. Cook, stirring constantly, until the mixture reaches 290 degrees – about 15 minutes. (Careful that the heat isn’t too high and make sure that you keep stirring – you don’t want the mixture to burn.)

Remove from the heat and stir in the cinnamon. Immediately pour the mixture onto the prepared sheet. Let stand for 1 minute. Sprinkle with the chocolate chips and let stand for a couple more minutes while the chocolate softens – once it has softened, spread it over the toffee. When the chocolate sets (2 - 3 hours), break the toffee into pieces (you can’t cut it – just break it up).
