On Saturday, March 9, two giants in the food and wine world—celebrity chef Todd English and Justin Winery, famous for Californian Bordeaux-style wine—will join forces at Bellagio’s Epicurean Epicenter series. This four-course, five-wine dinner will take guests on a journey through global gastronomy, while staying true to its western roots with California’s refined viniculture.
Continuing with the Epicurean Epicenter’s motif of innovative culinary adventure, this dinner event veers away from the traditional wine pairing. Chef English of Olives has worked with the Bellagio’s Master Sommelier Jason Smith to craft cuisine for this event around Justin Winery’s featured Bordeaux, instead of the other way around.
The menu will feature eclectic creations such as Poached Merus Crab Leg, paired with ‘Overlook’ Chardonnay, and the “Duck Duck Goose,” or seared duck breast with confit leg ragu and foie gras tortellini, designed to complement Jusin’s ‘Justification.’ Veal Osso Buco with parmesan polenta, garlicky spinach and walnut gremolata [chopped herbs] will come with Justin’s ‘Isosceles’ and highly acclaimed ‘Isosceles Reserve.’ The meal will conclude with Peanut Butter Falling Cake and Justin’s ‘Obtuse.’
Foodies and wine lovers alike will be dazzled by the experience, as much a show as it is a meal. Guests will see the journey unveil itself inside Tuscany Kitchen, the Bellagio’s high-tech exhibition kitchen. Bottles from Justin Winery, based in Paso Robles, have received 90+ points for past and present vintages by the major wine consumer publications.
