Tips to Grow Eggplant in your Garden

Eggplant can be difficult to grow in the St. Paul, Minnesota area but if you start it early indoors your chances of having a successful crop is better.  Start your eggplant seeds indoors in March or April and transplant the plants into your garden after all danger of frost is past.

Plant your eggplant seeds in warm soil and place them in a well lighted area like in a south window or under a sunlight.  Keep the soil moist so the seeds can germinate properly.  When the plants are established you can plant them outside in your garden.

Plant your eggplants in well fertilized soil that has plenty of drainage but do not let the plants dry out completely.  Keep the plants weeded well to keep competition away from your eggplants.  Eggplants can get crowded easy and then they will not produce well so weed them often and keep the area around them clean.

Eggplants can be harvested when the fruit is a deep purple color.  They do not last as long as other vegetables once they have been picked so wait to pick them until you are ready to eat or preserve them.  If you care for your eggplants you can get a great harvest from them.
