The ethnic cuisine is wonderful. Most of the cuisine is New Orleans style Creole or Cajun. Creole and Cajun cuisine have influences from the French, Spanish, Caribbean, Canarian, Mediterranean, Deep Southern American, Indian, and African influences. Though this style of cuisine migrated into the home of the Aristocratic French, it was once the cuisine that the French peasants enjoyed.
Peppers, citrus juices, rice, and beans are all characteristic of a typical Creole or Cajun dish. Tomato sauces were integrated into the dishes by Italian immigrants. Seafood, including oysters, shrimp, crab, crawfish, and trout are commonly present in Creole or Cajun dishes. Chicken, sausage, and turtle are also common.

Haitian Relief Fund
The Haitian culture has similar ethnic influences to the Creole culture of Louisiana. While dining, enjoying the festivities and the quality cuisine, take a moment to remember the Haitian tragedy. If you have not had a chance to donate, one of the charities below is still accepting donations. $61 million has been donated, yet more is needed.
