Ever hear of a thumbprint cookie? These are similar. This is a family recipe that is made at Christmastime.
Thump Cookies
- 1 cup butter
- 1 cup sugar
- 2 egg yolks, save whites
- 1 tsp vanilla
- 2 cups flour
- ¼ tsp salt
- 1 ½ cups nuts, chopped
- Jam, raspberry, strawberry or peach
Preheat oven to 350*. Line 2 cookie sheets with no-stick foil.
Cream butter and sugar.
Add egg yolks.
Add vanilla.
Mix in flour and salt.
Form into 1 inch balls. Dip and roll balls into egg whites then roll in nuts.
Press an imprint into each ball with your thumb.
Bake for 15-18 minutes. Check after 12 minutes.
After removed from the oven spoon jam into the imprint on the top of each cookie.
