The Week Ahead: Mushooms – a taste of heaven on February 12

Hobbit or no, it is grand that the wondrous mushroom has become so readily available and so diverse.  It wasn’t too long ago that if you could find mushrooms at all it was only the little white button type.  Now of course with the Renaissance in culinary interest, nearly every market carries beautiful fresh mushrooms and often a rather staggering array of varieties

One of the excellent things about mushrooms is that since they are not high in nutritional value, that means they have very few calories.  You can add them to things and get a lot of satisfaction and enjoyment without compromising your diet.  You could forgo the ham and cheese in your omelet, add an entire cup of lightly sautéed mushrooms instead and have a delectable and satisfying meal.
