The Union Kitchen to host ‘Let’s Get Healthy’ Three-Course Prix Fixe Dinner in J

Keeping our New Year’s resolutions in mind, Paul Miller, owner of The Union Kitchen, will host a special ‘Let’s Get Healthy’ three-course prix fixe dinner throughout January.

“We all know that the number one New Year’s resolution is to lose weight,” stated executive chef Juan V. Arellano. “It’s mine—and that is way I created this menu. I would rather eat my way to good health, than spend all my time at the gym.”

Here is a look at Arellano’s creation to a healthier diet in 2012:

1st Course:

  • Carrot Ginger Bisque

2nd Course:

With a choice between…

  • Strawberry Salad--Mixed field greens gently tossed with oranges, goat cheese, pecans,red onion, and dressed with white balsamic vinaigrette.
  • Diane’s Salad--Mixed field greens lightly tossed in white wine vinaigrette. Accompanied with artichoke hearts, marinated sundried tomatoes, kalamata olives, Parmesan cheese and balsamic reduction.

3rd Course:

With a choice between…

  • Crab Cake Entrée--
 Pan seared Texas Blue Crab, served over a fennel and orange slaw.
  • Truffled Mac and Grilled Chicken--Chicken served over creamy truffled mac and cheese, topped with a Parmesan crackle. Prosciutto and Arugula Pizza--
House made garlic cream sauce with thinly sliced Prosciutto and baby Arugula, tossed in a zesty lime vinaigrette and parmesan cheese.

The Union Kitchen features a unique global menu served in a casual atmosphere. The lunch menu focuses on sandwiches, wraps, entree salads and burgers. At dinner, the menu highlights steaks, chops, chicken dishes and seafood.

Brunch is served Saturday and Sunday from 10 a.m. until 2 p.m. and features four different styles of eggs benedict, a lobster omelet, a build-your-own Bloody Mary bar and carafes of mimosas.
