No other cookie says Christmas quite like gingerbread cookies do, and on day 7 of The Twelve Days of Christmas Cookies, we bring you a terrific gingerbread cookie recipe to make with your family this holiday season. As their name suggests, gingerbread cookies get their unique taste from the peppery kick of ginger and other spices, and their rich, dark, flavor from molasses. These flavorful bites of goodness are typically cut into shapes such as gingerbread men, and can be decorated with frosting, nuts, raisins, or candies. Whether you decorate them or serve them plain, gingerbread cookies will be a standout addition to your Christmas cookie tray this year!



Gingerbread Cookies

3 1/2 cups all-purpose flour

1 tsp. teaspoon flour

1 tsp. baking soda

2 tsp. ground ginger

1 tsp. ground cloves

1 tsp. ground cinnamon

1 tsp. ground allspice

1 cup packed brown sugar

1/2 cup butter, softened

3/4 cup molasses

1 egg, slightly beaten

  1. Combine dry ingredients in a large bowl.

  2. In another large bowl, mix softened butter, molasses, and beaten egg. Gradually add dry ingredients, stirring to combine. Dough will be very stiff, so you may need to use your hands. Cover dough and refrigerate for one hour.

  3. Preheat oven to 350 degrees. Roll dough in batches to 1/4 inch thickness on a lightly floured surface. Cut into shapes with cookie cutters.

  4. Place cookies on a lightly greased cookie sheet about 2 inches apart. Bake for 10-12 minutes at 350 degrees. Let cool and decorate as desired. Makes 1 1/2 dozen.
