Day 6 of The Twelve Days of Cookies brings a sweet treat that coconut lovers will be crazy about. Lightly toasted on the outside, sweet and chewy on the inside, Coconut macaroons are part cookie, part candy, and totally delicious. Fluffy white coconut topped with a bright red candied cherry will make Coconut Macaroons a standout on your Christmas cookie tray this year!
1 14-ounce can sweetened and condensed milk
1 egg white
4 cups angle flake coconut (about 10 oz.)
1/4 cup honey
1 teaspoon almond extract
1/3 cup flour
1/2 teaspoon baking powder
48 candied cherry halves (like you use for fruitcake), optional
1. Combine first 5 ingredients.
2. Stir in flour, baking powder and salt.
3. Drop by teaspoonfuls on a well greased baking sheet. Lightly press a cherry half into each unbaked cookie. Bake at 350 degrees for about 12 minutes or until coconut is lightly browned. Remove from sheet immediately and let cool on waxed paper.
