On day 10 of The Twelve Days of Christmas Cookies, we bring you another classic recipe. Peanut butter cookies have a special place in the hearts of any cookie lover, and for many of us, they bring back childhood memories of Christmases past. With their signature criss-cross pattern and pure peanutty goodness, these crispy cookies may not be the fanciest cookie on your holiday tray, but they will be one of the first to disappear!
Classic Peanut Butter Cookies
3/4 cup creamy-style peanut butter
1/2 cup vegetable shortening
1 1/4 cups firmly packed brown sugar
3 tablespoons milk
1 tablespoon vanilla extract
1 large egg
1 3/4 cups all purpose flour
3/4 teaspoon baking soda
3/4 teaspoon salt
1. Preheat oven to 375°F. In a large bowl, cream peanut butter, shortening, brown sugar, milk and vanilla. Beat at medium speed with an electric mixer until well blended. Add egg. Beat just until blended.
2. In a medium bowl, combine flour, baking soda and salt. Add to creamed mixture at low speed. Mix just until blended. Drop by rounded tablespoonfuls 2-inches apart onto greased baking sheet. Flatten slightly in a crisscross pattern with tines of fork.
3. Bake one baking sheet at a time 7 to 8 minutes, or until set and just beginning to brown. Cool 2 minutes on baking sheet. Remove cookies to cooling racks to cool completely.
Yield: 3 dozen cookies
