I'm so happy to "pass along" an "exclusive" recipe from Tina that will be absolutely wonderful for upcoming holiday events, and get togethers. Furthermore, you can enjoy sharing Tina's Recipe with special friends and family members in keeping with a tradition that has been popular in many families throughout the years.
Tina says she believes in “bold taste and instant gratification – but with health, simplicity and enjoyment at the forefront of our minds.” This is a unique recipe. It contains tuna that Tina chose to use because "it's a heart-healthy protein that is loaded with omega-3 fatty acids and is easy to use." Best of all, the recipe is easy to make and amazingly tasty!

Are you aware that "The Dietary Guidelines for Americans recommend that everyone, including pregnant and breastfeeding women, increase the amount of seafood they eat to 2 to 3 servings each week for heart and brain benefits. At a time when people are told to limit many foods, seafood is among the handful of “winning” foods Americans are encouraged to eat more of for their health?"
There is a short video at the top of this article that I recommend you view. It will enlighten you with some additional information about seafood and it's benefits.
I was curious about one more issue that I think we all have experienced at one time or another, and that is dealing with a "fussy eater". During the holiday season or anytime, it's always good to get some help in this area!! Tina came to the rescue. She shared the following advice and favorite kid-friendly recipe ingredients to help kids eat tastier and healthier meals.
Quoted from a recent interview Tina had with Baby Zone:
▪“Eggs are an ideal vehicle for creative dishes since they're virtually the perfect accompaniment to other ingredients-sweet or savory. They are a nutrient-rich food as well providing essential vitamins, minerals and protein. Fish is my other favorite ingredient. Options are endless as are the nutrient benefits of fish.”
▪ To get kids to eat veggies, such as zucchini, Tina adds them to a Curried Veggie Pancake recipe. She says, “Now the kids ask for this recipe. They like the dollar-sized pancakes for a snack which is just fine with me.”
▪ Her favorite go-to meal for kids? Black bean burgers, that includes brown lentils hidden in the mix. She suggests serving them with slices of avocado and low-fat sour cream or Greek yogurt!
▪ For the holidays, she says she likes the idea of keeping things exciting by serving a new entrée or side dish, in addition to the traditional dishes!"
With all of this information from Nutrition Expert-Tina Ruggiero, we can educate ourselves, and with a few easy adjustments in our food choices consume delicious food that is healthy for us...and...even deal with a "fussy eater" when necessary!
What a positive way to start the new year!
