When Dawn Casale, one of the creative culinary minds behind One Girl Cookies, a Brooklyn sweet-scene favorite, started her business she had no idea that her late great grandmother would play such an essential role in her darling bakery.
Now nestled among brownstones on tree-lined Dean Street in Cobble Hill, One Girl Cookies comes from much more humble beginnings. Dawn began baking many years ago out of her West Village apartment. And when it then came time to name her new cookie creations, she knew she wanted monikers that were original and unique. So she drew inspiration from women‘s names, like Cecilia and Juliette. She even chose to call one of the more sensual desserts, “Lucia.” She didn’t know anyone with the name, but it seemed to speak perfectly to the velvety, decadent, caramel, chocolate, and shortbread bar.
It wasn't until three years after she settled on names for her amazing little cookies that Dawn discovered her great grandmother had also been called Lucia. It was a sign.
A decade later, One Girl Cookies now enjoys a principal position among the most favored bakeries in Brooklyn. Dawn and her partner David Crofton are an inspiration to small business owners everywhere. They've since grown their appealing brand and its magnetic menu into a full-scale operation that caters events, offers favors for parties and weddings, and even boasts a refined weekend dessert bar where after dinner sweet-seekers can enjoy the pastry chef’s delightful plated desserts in a relaxed and cozy atmosphere. It’s a testament to Dawn and David’s creative palette that every Brooklynite needs to include One Girl on their must-try list.
Great grandmother Lucia would be proud.
