Today’s recipe comes from the glamorous Sky Room restaurant in downtown Long Beach, CA. Executive Chef, Juan Carlos Olvera is sharing one of his truly decadent, but easy to prepare recipes. If you didn’t know, The Sky room is participating in Long Beach's week long celebration of CA Restaurant Month January 21-27, 2013 with its own version titled “Cheese Week.” That alone is a good reason to visit.
Chef Olvera has been at The Sky Room for 13 years. He has created an eclectic menu featuring California cuisine. Accompanied by a 360-degree million dollar view overlooking the Pacific Ocean and the downtown Long Beach city skyline, its romance and sensual beauty just waiting for you to immerse yourself in . The Sky Room’s delicious but surprisingly affordable menu and magnificent views, are complemented by impressive live weekend entertainment. The Sky Room’s philosophy of "Dining, dancing and romancing" is perfectly suited for all guests of all ages who enjoy fine dining, spirited dancing and a romantic view.
The esteemed Sky Room, located atop the historic Breakers of Long Beach Hotel (just steps from the convention center) , is as ideal destination along the Pacific Coast for singles, couples, families, or groups. Restaurateur Bernard Rosenson acquired the Breakers in 1997, and immediately restored the property to its pre-war Art Deco grace; reopening The Sky Room in February 1998. Just walking in to the building is like steping back in time. Always a rendezvous for personalities such as Elizabeth Taylor, Nicky Hilton, Charles Lindberg, Babe Ruth, John Wayne, Errol Flynn, Cary Grant, and other celebrities., it continues now wowing locals, tourist’s and VIP’s. Casually elegant dress or business wear is appropriate.
Expect an exceptional “Cheese Week” menu of Beet Salad, Lobster Mac & Cheese and Gorgonzola drenched Filet Mignon. Desserts are to die for. But perhaps what I enjoyed the most was the professional service. Our waiter Marty made the evening for us. His suggestions and attentiveness far exceeded our expectations. If you can’t make “Cheese Week, “make time to visit this very special place another time. On the weekdays, expect a relaxed leisurely experience. On the weekends, you’ll find a fine super club atmosphere. And ladies…there’s a very special surprise waiting for you in the Ladies Room.

Filet Mignon Bites
Compliments of Executive Chef, Juan Carlos Olvera
Ingredients:
4oz Filet cubed
2oz Gorgonzola Cheese
2oz Diced Walnuts
4oz Balsamic Vinegar
Directions:
Cover cookie sheet with parchment paper. Place walnuts on cookie sheet. Cover walnuts with gorgonzola cheese. Place walnuts and gorgonzola in oven for 3 minutes to melt. Slow boil balsamic vinegar in saucepan until thickened. Remove melted gorgonzola and walnuts from oven and mix well. Grill filet on 4 sides until cooked medium rare. Place walnut mixture atop grilled filet and drizzle with balsamic reduction.
