Fall is upon us and it's time to 'pumpkinize' everything! Everyone needs to have a go to fall pumpkin recipe and these pumpkin muffins are it! They are quick, simple, and very easy to sub in and out different ingredients in order to make it healthier or simply more delicious.
- 2 cups whole wheat flour
- 1/4 cup sugar
- 1 can pumpkin
- 1/2 cup sugar free applesauce
- 2 eggs
- 1 tsp vanilla
- 1 tsp salt
- 1 tbsp baking soda
- 1 tsp baking powder
- 1 tbsp ginger
- 2 tbsp cinnamon
- brown sugar - optional
Directions: Preheat oven to 350 degrees.
Combine flour, sugar, salt, baking soda, baking powder, baking soda, cinnamon and ginger. In a separate bowl combine the pumpkin, applesauce, vanilla and eggs.
Combine wet and dry ingredients until just combined. Scoop batter into cupcake liners that have been sprayed with non-stick spray.
Fill almost to the top and sprinkle with a combination of granulated sugar and brown sugar. Bake for 20 minutes.
