The latest buzz in the world of good brews is revolving around Evolution Craft Brewing Company of Delmar, Delaware. Their creative take on brewing involves fresh,unique flavors including an array of flowers in their new seasonal Sprung Up Ale. This small batch brewery is rapidly growing in popularity and is currently being distributed in our area by F. P. Winner. Fager's Island has had much success with having EVO brews on tap and popular, local liquor stores, such as Lighthouse in Fenwick Island, also intends on carrying Evolution beers. 

The Shark hosted a beer tasting and  four course dish pairing featuring the latest Evolution creations this past Monday with flavorful success from both the beer and the food-and the crazy way the flavors work in harmony. The menu was as follows:

1st course EVO Sprung Up Ale (the latest) with large, local, pretzel encrusted scallop and sweet mustard. A refreshing new spring ale with hints of honey and flowers perfectly matched with fresh scallop(see slidshow for photos of the dishes) 

2nd Course Exile ESB with apricot salad and candied almonds

3rd Course EVO Rise Up Stout with panko fried oysters and dark chocolate sauce; the coffee flavors of the stout paired superbly with the dark chocolate.

Final Course EVO Double IPA with pulled pork empanada 

Evolution Craft Brewing Co. is dedicated to pairing good food with their creations. Visit the Chef's Table on their home site for delicious recipes such as their Delmonico steak with EVO Exile ESB infused Cali-style scampi sauce and other suggested food pairings for their Lucky 7 Porter and Primal Pale Ale. On April 19th The Shark will be hosting Unplugged and Uncorked, an event with Paul Cullen of Bad Company, bringing together two of the gretest things in the world; wine and music, and of course, the amazing menu from The Shark.
