The Margarita Party

Okay- we live in Southern California, so the Margarita party is a natural, right? I happen to be a purist, but I know there’s a lot of love out there for strawberry, mango, even prickly pear Margaritas. Bartender extraordinaire, Wes Clark has even shared a recipe for a special watermelon Margarita type cocktail (the Acapulco Cliff Hanger) with us.

 And what better to accompany those Margaritas than a taco bar? Fill colorful bowls with various fillings and toppings and let guests make their own. Or for a great look (if you have party help), keep a steady flow of tacos with various fillings lined up on a platters for guests to pick up and dress with salsa, guacamole etc. By the way, don’t forget vegetarians when making your fillings. Sautéed vegetables with potatoes and roasted chiles makes a delicious taco. Serve a grilled corn salad as a side to take advantage of  summer’s bounty.

What’s the perfect dessert for a taco party? Flan! Now I have not previously been a huge flan fan, but when I tasted the flan from Flan King (www.flan-king.com), I had to change my mind on that one. Their flan is a must try. They make large ones for slicing, as well as single serving flans. It’s available at various farmer’s markets throughout the city.

Add in a mariachi band for entertainment (if you’re indoors hire a band without the trumpets to keep the volume level down). It’s easy to find one here in SoCal. Make a trip to Mariachi Plaza (www.mariachiplazalosangeles.com) in East L.A., or call a favorite Mexican restaurant and ask for a recommendation. P.S. While you're on  your way to that side of town, stop by Olvera Street (www.olvera-street.com) -L.A.'s  original shopping center-and browse for some great  table decorations.

Acapulco Cliff Hanger
 
1 cup watermelon chunks, pureed in the blender and strained (makes about 1/3 cup)
2 ounces light tequila
1 ounce lemon simple syrup
1 ounce lime juice
1 ounce Cointreau
Top with 25% soda
Rim glass with margarita salt
 
Rim glass with salt, Fill with ice. Pour everything, except the soda, into the glass and stir to chill. Add soda and stir again. Squeeze the lime on top and drop into the glass. Garnish with a lime wedge and serve.
