3 ½ ounces Shredded Sharp cheddar cheese
6 Medium sized potatoes
1-1/2 cups Sour cream
¼ tsp. Salt
1/3 cup Onion, finely chopped
- After cooling, cut potato open lengthwise.
- Scoop pulp into a bowl, leaving the shells intact.
- Add cheese and sour cream to pulp.
- Mash and stir in onions and salt.
- Increase oven temp. to 450 degrees.
- Stuff the shells with the potato mixture; add paprika (sprinkles).
- Place on baking sheet and bake @ 450 degrees for 15 minutes.
