The last snowballs of winter

Winter may be coming to an end, but it isn't the last time for seeing snowballs this year. You can make Snowball Cookies any season! They're fast, easy and oh-so-delectable! These bite-sized treats will melt in your mouth just like a snowball in your hand!

First, you will need to preheat your oven to 350 degrees. Then, with either a hand mixer or even in your food processor, cream a 1/2 cup of softened, unsalted butter (one stick) until it is light and fluffy (like fresh snow).

Next, sprinkle 2 tablespoons of sugar (pretend it’s snowing out) and 1 teaspoon of vanilla to the butter. Chop 3/4 of a cup of pecans and toss those in, as well, with 1 cup of flour.
Using a tablespoon, shape 1-inch balls and place them on a well-greased cookie sheet. These won’t spread much, so you don’t need to space them out too far apart.

Bake for approximately 15 minutes and then allow to cool. Once they are at room-temperature, roll the balls in powdered sugar. Viola! You can have snowballs in July if you so desire!

These cookies turn out looking beautiful and make an excellent presentation on a platter for a dinner party or dessert table. You can even use a tooth pick to stack one on top of another and use frosting or gel to pipe on a snowman’s face!

Snowball fights with these cookies are not recommended.
