The ease of making your own snack crackers

We are planning a roadtrip, and I hate stopping along the way and eating all that fast food or processed gas station snacks. One of my family's favorite snack foods is cheese and crackers and it makes for perfect roadtrip fare. I, of course, didn't think about that until after we'd left the extremely busy grocery store on Christmas Eve. Even if I could have convinced my husband to go back into that chaos, I wouldn't have wanted to. That's when I decided to try making my own crackers.

What I am discovering as I try to reduce the amount of processed foods we eat is that making these things that we are so used to just buying already made in a box is easier and less time consuming than one might think. The crackers were so simple, I don't think I'll ever have to buy another cracker. All it takes is flour, either oil or butter, water and salt, which ends up being a lot cheaper than boxed crackers. For my crackers, I used oil and sprinkled salt on top for added measure. The result was a gourmet Christmas Day treat, and a great snack for our roadtrip. I have yet to try making specialty crackers like herb or parmesan cheese crackers, but I look forward to giving them a try. I am, however, pleased with the plain salty cracker.

Homemade Cracker

2 1/2 cup flour

2 tsp. salt and extra salt to sprinkle on dough

4 to 6 tbsp. butter or olive oil

12 tbsp. water

Method

1. Mix flour, salt, butter or oil and water together until you get a doughy ball. Use more water if dough is to dry.

2. Turn ball onto a floured cutting board.

3. Roll dough to 1/8-inch thick.

4. Place rolled dough on a cookie sheet and sprinkle some additional salt on the dough.

5. Bake at 400 degrees for 15 minutes or until dough is stiff and brown on the edges.

6. Let cool and break into pieces.

7. Serve with cheese or homemade hummus.
