10 ways to incorporate cucumbers in daily eating

Step 1: Because the skin of a cucumber has so much nutritional value, I highly recommend leaving it on. Leaving the skin on also preserves the structure of of the cucumber so it doesn't get mushy.

“Super Hero Cucumber,” has so many positive health benefits. Plus, they are easy to eat. I don't recommend ever giving up coffee, unless it makes you sick, but you could replace a full cup of coffee with a cucumber because it provides as much energy not to mention it also hydrates the body.

There are many varieties of cucumbers so you can choose, as each will have a little different flavor. This is day 2 of the 10 day, Cucumber Series by Food Allergy Gal.

Day 1: Cut cucumbers into round circles and eat them (just like that- bam it’s a simple snack).

Day 2:

  1. Cut a few sections of skin off the cucumber by pealing the long way. (The skin is very good for you so don’t peal them all the way.)
  2. Then cut them the short way- chop them up into small thin slices
  3. Shredded lettuce add a few whole cherry tomatoes, salt, pepper and 1 teaspoon of olive oil. (Adding a hint of a balsamic or apple cider vinegar is great too)
  4. Add your cucumbers to this great to go salad. (It can be packed in a glass or metal bowl with a top and taken on the road to be pulled out for that later on in the day hunger.)
