The Broken Yolk Café’s Mom Omelet (Photos)

Today’s recipe comes from Chef Oscar Babb from The Broken Yolk Café in Temecula, CA. The Broken Yolk Café is a favorite among locals and visitors alike. With a strong commitment to good food and personable service, the Broken Yolk has built a reputation for its large menu, ample portions and freshly-made flavor. Real shredded hash browns - not dehydrated potatoes. Salsa made fresh daily - never from a can or jar.

With over twenty different omelets plus a large variety of breakfast favorites including pancakes, waffles, Mimosas, and French toast, Broken Yolk is a place for the casual to the pickiest of diners - all in a clean, comfortable and casual atmosphere. Come early on the weekends, the place is packed.

Our server Rena was the perfect guide for our first visit. She patiently and expertly explained the menu and the owner’s philosophy. “We are really customer oriented. Whatever you want, however you want it, we’re happy to accommodate. If you have a favorite dish that’s not on the menu, if you can describe it our Chef will make it for you.” She also shared, “We offer many gluten free dishes. We take extra steps to make sure our gluten free meals are served and handled properly and taste delicious.”

I had the Temecula Restaurant Month special – minute steak, hash browns, eggs and muffin ($5). My husband had the Huevos Con Chorizo ($9.49). Both meals were excellent. We chased our breakfast down with Tangerine and Pomegranate Mimosas. We ended on a sweet note, trying the Dolce de Leche Crepes ($7.99). Double yum – a must try.

Breakfast is served all day long, but they’re open for lunch also. Try one of their signature salads, juicy half-pound burgers or street taco plates.

4 Eggs
1/2 Onion
1 Green Bell Pepper
8oz Sliced Mushrooms (white)
1oz Alfalfa Sprouts
1 Avocado

Scramble the eggs and make an omelet, then sauté all the other ingredients and add them to the inside of the omelet. Add fresh salsa and sour cream on the side and accompany with a cup of fresh fruit and wheat toast for a healthy option. Also great with egg whites.
