The Best of the Chef: Winter Soups - Hearty Cabbage Soup

When your mind first starts to think of winter soups, the first soups which come to mind are hearty soups. Soups loaded with goodness. This might be the perfect hearty winter soup. Just look at those ingredients, loaded with nutrients, vitamins and minerals. Even better, it's delicious!

We got this soup from the archives of Chef Larry Edwards and according to the original recipe, the origins of this soup are from Russia. Makes sense when you consider the winters they have there -- brrrr!

Ingredients needed to make Hearty Cabbage Soup (serves 4):

  • 3 Tbs. butter
  • 2 cups shredded cabbage
  • 1 ¼ cups sauerkraut, drained and rinsed
  • 6 cups beef stock
  • 1 Tbs. tomato paste
  • 1 carrot, julienned
  • ½ white onion, chopped
  • 1 stalk celery, chopped
  • 1 tsp. minced dill
  • 1 turnip, peeled and diced
  • 4 plum tomatoes, chopped
  • 2 cloves garlic, minced
  • ¼ cup sour cream

Steps:

  1. In a large saucepan melt 1 ½ Tbs. butter over medium heat. Add the cabbage and sauerkraut and sauté 10 minutes. Add 2 cups of stock and tomato puree, cover and cook 30 minutes.

  2. In a small sauté pan or skillet melt the remaining butter over medium heat. Add the carrot, celery and turnip and sauté 10 minutes.
  3. Add the sautéed vegetables into the soup and stir in the remaining stock, tomatoes and garlic. Reduce the heat to a simmer, cover and cook 30 minutes.
  4. Remove the pan from the heat and let cool 15 minutes.
  5. Ladle the soup into serving bowls and top each with a dollop or sour cream before serving.
