The Best of the Chef: Winter Soups - Grilled Chicken Soup

It probably wouldn't be a real winter soup series if we didn't have a chicken soup in the fray. Let's face it, this is probably the most famous winter soup there is and if you've been to the supermarket recently, it seems there is at least one display full of those famous red-and-white cans of chicken soup. So we figured why should we be different. Let's throw a chicken soup up on the site!

Okay, this isn't "just" a chicken soup. This is an unreal chicken soup and it comes from the archives of our resident Chef, Chef Larry Edwards, and it seems what he has done is to take chicken soup to an entirely new level. An incredibly rich chicken stock with slices of freshly grill chicken breasts. Honestly, we don't think the Chef even knows the meaning of the word "mundane!"

Ingredients needed to make Grilled Chicken Soup (serves 4):

  • 2 whole chicken breasts, halved
  • 1 Tbs. corn oil
  • 1 tsp. salt
  • 1/s tsp. ground black pepper
  • 2 Tbs. olive oil
  • 1 leeks, cleaned and chopped
  • 4 cloves garlic, thinly sliced
  • 4 cups chicken stock

Steps:

  1. Remove the fat from the chicken and rub with the oil and then season with the salt and pepper. Set the chicken aside 5 minutes.

  2. Pre-heat broiler or grill.
  3. In a medium sauté pan or skillet heat the olive oil over medium heat. Add the leek and sauté 5 minutes. Add the garlic and sauté 1 minute.
  4. Place the chicken under the broiler or on the grill and cook 5 minutes per side, longer on the grill (or to desired doneness). Remove the chicken to a cutting board and set aside.
  5. In a medium saucepan bring the chicken stock to a boil over medium heat.
  6. Using a slotted spoon remove the leeks and garlic from the sauté pan and place into the chicken stock.
  7. Slice each grilled breast on slant and about 1/2-inch thick. Place the sliced breast meat into serving bowl.
  8. Ladle the stock over the breasts and serve.
