Potatoes! They're always on sale and a perfect food for winter!
If you want an easy soup that is perfect for winter, look no further than this soup from the archives of Chef Larry Edwards. It is a rich, satiny smooth soup and for potato lovers, it is pure nirvana!
Ingredients needed to make Cream of Potato Soup (serves 2):
- 1 cup mashed potatoes
- 2 cups milk
- 1 cup whipping cream
- ½ tsp. salt
- ¼ tsp. ground white pepper
- 1/8 tsp. ground allspice
- 2 Tbs. butter
Steps:
- In a medium saucepan over medium heat whisk all the ingredients, except the butter, until smooth and bring to a boil.
- Reduce the heat to a simmer and cook 5 minutes.
- Ladle into bowls, top with a tablespoon on butter and serve.
