The Best of the Chef's Winter Soups: Cream of Potato

Potatoes! They're always on sale and a perfect food for winter!

If you want an easy soup that is perfect for winter, look no further than this soup from the archives of Chef Larry Edwards. It is a rich, satiny smooth soup and for potato lovers, it is pure nirvana!

Ingredients needed to make Cream of Potato Soup (serves 2):

  • 1 cup mashed potatoes
  • 2 cups milk
  • 1 cup whipping cream
  • ½ tsp. salt
  • ¼ tsp. ground white pepper
  • 1/8 tsp. ground allspice
  • 2 Tbs. butter

Steps:

  1. In a medium saucepan over medium heat whisk all the ingredients, except the butter, until smooth and bring to a boil.
  2. Reduce the heat to a simmer and cook 5 minutes.
  3. Ladle into bowls, top with a tablespoon on butter and serve.
