The best breakfast muffins, and buying the ingredients at Whole Foods

Muffins are a great way to start you day. Especially the following recipe. It is filled with healthy ingredients that make a great breakfast.

All of these healthy ingredients can be bought at Whole Foods in Lexington. The produce there is amazing, so you can buy perfectly ripe bananas there for the recipe and other produce for the rest of your week.

Whole Foods is also a great place to buy your flour products. You can the wheat bran,whole wheat flour, and rolled oats. They are all so good for you and taste great in the muffins! Enjoy!

Breakfast Muffins 


1 banana, ripe or over ripe,  mashed 

1 small container apple sauce, 4 ounces

1 egg

1/4 cup vegetable oil

1/2 cup milk 

1/2 cup brown sugar

1 cup rolled oats

1 cup whole wheat flour 

2/3 cup wheat bran

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon salt

1/2 large carrot, shredded 

1 cup raisins


1. In a medium sized bowl combine the first six ingredients. Stir well and set aside.

2. In a large bowl combine the rest of the ingredients. Mix well and add the wet ingredients. 

3. Preheat the oven to 400 degrees. Line a muffin pan with liners. Pour the batter, 1/4 cup per muffin, into the pan.Cook for 15-20 minutes. Makes 12-16 muffins.

    Love the addition of whole wheat flour and bran. And these could practically count as a fruit/veg serving they have so much fresh produce in them!
