1 banana, ripe or over ripe, mashed
1 small container apple sauce, 4 ounces
1/4 cup vegetable oil
1/2 cup milk
1/2 cup brown sugar
1 cup rolled oats
1 cup whole wheat flour
2/3 cup wheat bran
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1/2 large carrot, shredded
1 cup raisins
1. In a medium sized bowl combine the first six ingredients. Stir well and set aside.
2. In a large bowl combine the rest of the ingredients. Mix well and add the wet ingredients.
3. Preheat the oven to 400 degrees. Line a muffin pan with liners. Pour the batter, 1/4 cup per muffin, into the pan.Cook for 15-20 minutes. Makes 12-16 muffins.
