Thanksgiving pie recipes

It's Thanksgiving time and you know what that means? It's time for pie! Here are several easy and popular Thanksgiving pie recipes for you to make for your family and friends this year.

Double Vanilla Pumpkin Pie

  • 1 1/2 cups fresh pumpkin puree
  • 1 can (12 ounces) evaporated milk
  • 2 eggs
  • 1 cup sugar
  • 1 tbsp flour
  • 1/2 tsp salt
  • 2 tsp vanilla extract
  • 1/2 tsp each: ground cloves. cinnamon and pumpkin pie spice
  • 1 unbaked pie crust

Preheat oven to 450*.

In a large bowl combine: pumpkin, milk, eggs, sugar, flour, salt and spices. Mix well with a wire whisk and pour into pie shell.

Bake for 20 minutes, then turn oven temperature down to 350* and bake for an additional 40 minutes (or until knife inserted into center comes out clean).

Tip: To prevent a burnt crust, I place a metal crust ring over the exposed crust before baking. If you do not have one, you can use aluminum foil.

Pecan Pie

  • 3 eggs (beaten)
  • 1½ cups of granulated sugar
  • ½ cup of corn syrup
  • 2 teaspoons of vanilla
  • 6 tablespoons of melted butter or margarine
  • 1 cup of pecans (halves or chopped, your choice)
  • 1 pie crust

Combine eggs, sugar, syrup, butter and vanilla. Mix together.
Pour mixture into your pie crust.
Sprinkle pecans over the top of the mixture.
Bake for 45 to 60 minutes at 350°.
Eat warm (not hot) or refrigerate.

Sweet Potato Pie

  • 1½ cup of sweet potatoes (cooked or canned)
  • 2 teaspoons of margarine (softened)
  • 1 cup of granulated sugar
  • 3 eggs (separated)
  • 1/3 cup of evaporated milk
  • 2 teaspoons of vanilla
  • 2 teaspoons of cinnamon
  • 1 deep-dish pie crust or 2 regular pie crusts

Preheat your oven to 375°.
Mix potatoes, margarine and sugar together.
Add milk, vanilla and cinnamon to your mixture.
Beat your egg whites until they form stiff peaks.
Fold egg whites into your potato mixture.
Pour your mixture into your pie crust(s).
Bake your pie(s) for 10 minutes at 375°.
Turn your oven down to 350° after 10 minutes and bake for 35-40 minutes. 

Easy Coconut Custard Pie

  • 2 cups of milk
  • 1 cup of granulated sugar
  • 4 eggs
  • ¼ cup of butter or margarine
  • 1 teaspoon of vanilla
  • 1½-2 cups of sweetened coconut
  • ½ cup of Bisquick

Preheat your oven to 350°.
Spray an 8-inch, glass pie plate with butter spray.
Mix milk, sugar, Bisquick, eggs, butter and vanilla for about 3 minutes.
Pour mix into your pie plate.
Sprinkle coconut over the top.
Bake for about 40 minutes. Top will be brown.
Eat warm or refrigerate.
