There are only a handful of Thai restaurants in Columbus, but the best of these is Chili Thai on Veterans Parkway. Inconspicuously located between a pool store and a wings place, Chili Thai's humble appearance offers no hints to the fantastic food inside. Locally owned, the restaurant offers Thai cuisine made from fresh ingredients and authentic recipes. As good as it is, many of us are on tighter budgets these days. For the nights when you can't go out, try this simple Thai-inspired curry recipe.
Cut a pound of boneless, skinless chicken breasts into cubes. Add to a deep saute pan along with 1 can coconut milk and 2 tbs red curry paste (available at local Publix stores). Stir in 1 tbs soy sauce and 2 tbs fish sauce. Simmer the mix until the chicken is cooked through.
Remove the curry from heat and add the juice of 1 lime. (For a different twist, also stir in 2 tbs crunchy natural peanut butter.) Add a ripe avocado immediately before serving. This curry is best when eaten over a bed of sticky white rice.
