Just because the Cowboys will not be playing football on Sunday does not mean that you cannot throw a Texas-style Super Bowl party! This Tex-Mex Super Bowl party menu will guarantee that you and your guests will have a fiesta to remember when the New Orleans Saints meet the Indianapolis Colts in Super Bowl XLIV on Sunday.
Kick off the party with a Texas-sized spread of salsas, guacamole, queso dip and tortilla chips that should keep your guests running to the buffet table between commercials. You can purchase a premade vegetable tray from the grocery store or make your own if you have time. Crispy baked Margarita chicken wings should keep the carnivores happy.
For a main course, it is nice to keep things simple. What fun is throwing a Super Bowl party if you miss the big game because you are stuck in the kitchen? Hearty Crockpot Posole is easy to make and as long as you throw it together before noon, it should be ready by half time. You can use canned enchilada sauce or make your own– it is a delicious dish either way.
If you or any of your guests are vegetarian, cheese enchiladas are a easy main course or tasty side dish, and home made enchilada sauce makes them extra special. The enchiladas can be assembled ahead of time: just pop them in the oven half way through the second quarter and they will be ready by half time. Check them at the two minute warning just in case.
