Teriyaki salmon

2 salmon fillets
Salt and pepper to taste
1 tbsp. flour
½ tbsp.olive oil
1 tbsp. butter
2 tbsp. sake
1 tbsp. mirin
1 tbsp. sugar
2 tbsp. soy sauce

Rinse the fillets and dry with a paper towel or cloth. Season each side with salt and pepper and ½ tbsp. of flour (per side). Rub evenly into the fillets. Heat the oil and butter over medium heat. Add in the fillets, cooking for about 3 minutes on the first side. Flip and add in 1 tbsp. of the sake. Cook another 3 minutes covered. Remove the salmon from the skillet. Combine the rest of the sake, mirin, sugar, and soy sauce, stirring until the sugar dissolves. Add the sauce into the skillet. Heat until boiling, then add the salmon back to the skillet. Evenly distribute the sauce over the fillets. Cook until thickened. Serve and enjoy!
