Tequila Mojito

It's tequila week this week.  If you are looking for something delicious and different to make with tequila, get out to the farmer's market, or your own back yard, and pick up a bunch of mint--it's fresh, local and organic.  Then head to your favorite spot for relaxing, on the deck, by the pool, or just on the couch and mix up a batch of tequila mojitos.

Here's my favorite recipe:

  • 2 oz reposado tequila

  • 1 tsp sugar

  • 6 mint leaves

  • 1 key lime split in half or 1/4 of a regular lime

  • seltzer or club soda

  • ice

Place mint leaves, sugar and lime in a glass and muddle to release the juice from the lime and the extract from the mint.  Add tequila and stir.  Add ice and top with soda.  Kick back, relax and enjoy.

For a yummy variation, add a splash of pomegranite juice or pink grapefruit juice.
