Teff is a fine grain, so fine indeed that it is the smallest grain in the world. The grain leads all the grains in calcium content, which helps strengthen your bones. It is also very versatile and is high in calcium, iron, potassium, phosphorus, protein, zinc, and B-vitamins. A single serving size of teff is about 1/4 cup and only 160 calories. Whole teff can be cooked and can be sweetened as a breakfast porridge. Teff flour is gluten-free, and can be made into waffles, and other baked goods.
Add 1 cup of teff to a medium large pot and 3 cups of water, bring to a boil.
Once boiling turn the heat to low and cover the pot, cook for 15-20 minutes.
