Tasty healthy chicken fajitas

Chicken fajitas are on the menu for Tasty Tuesday this week. If you love Mexican food but hate all the fat from the cheese, sour cream, and fatty refried beans, you will love this healthy recipe. Full of vegetables and a natural marinade for the chicken this dish is a delicious and nutritious way to enjoy a Mexican meal. You get all the food groups together in one dish, the vegetables, protein and carbohydrates. They are delicious served with vegetarian refried beans as a side.

Chicken Fajitas

Ingredients:

Chicken Tenders
1/4 cup low-sodium soy sauce
1/4 cup Wishbone Italian Dressing
1 red bell pepper sliced
1 medium onion sliced
1 tsp olive oil or 2 Tbls of chicken broth
corn or flour tortillas

Mix the soy sauce and italian dressing and marinade the chicken for at least one hour prior to cooking. Saute the onions and peppers in a tsp of olive oil or 2 Tbls of chicken broth for about 3 minutes until the onions are translucent and the peppers are soft but not too mushy. Set aside in a bowl. Saute the chicken in the same pan until well cooked- no pink should show in the center of the chicken. Combine all the ingredients together in the pan to mix with the juices and serve on warm corn or flour tortillas.
