Summer Cous Cous Salad
Serves 4
Ingredients:
- 1 Pound Israeli Cous Cous
- 2 cups water
- 1 zucchini (1/2” dice)
- 1 yellow squash (1/2” dice)
- ½ red onion diced
- ½ cup shredded carrots
- 1 (15oz) can black beans drained
- ½ cup chopped cilantro
- 1 tsp. lime juice
- 1 tsp. honey
- 1/4 tsp. cumin
- 1 tbs. extra virgin olive oil
- Salt and pepper to taste
Directions:
- Prepare cous cous according to package. Drain, rinse and cool.
- Combine cous cous and all vegetables, olive oil, lime juice and honey. Stir to combine.
- Add all spices and mix to combine. Add salt and pepper to taste.
