Tacos can be made in a variety of ways. Of course we have regular beef tacos. Then your variations of chicken, shrimp or fish are popular as well. This time of year calls for something a little heartier though, how about a taco soup? This soup is so easy to make, it is a slow cooker recipe so get your ingredients together early in the day and then go ahead and run some errands and pick the kids up from school, your soup will be waiting for you later on. 1 ½ lb ground beef
1 cup chopped onion
1 (1.25 ounce) package taco seasoning
1 (1 ounce) package ranch dressing mix
2 (15.25 ounce) cans of corn, undrained
1 (15 ounce) can of red beans, undrained
1 (15 ounce) can of black beans, undrained
2 (10 ounce) cans diced tomatoes with green chilies, undrained
1 cup chicken broth
½ tablespoon cumin
Cook beef and onion in a large skillet until meat is no longer pink, drain.
Combine meat mixture, 1 ½ cups of water, seasoning mixes and the rest of the ingredients in a slow cooker.
Cover and cook on low 5-6 hours.
Top with any combination of the following:
Shredded cheddar cheese
