Why not try Taco Pot Pie instead of the usual taco dinner? This dish packs taco filling into a pie that's made of flour tortillas. Serve it up with sour cream and fresh pico de gallo if you wish.
Taco Pot Pie
- 1 rotisserie chicken, meat pulled off the bone and shredded (you could substitute a pound of browned ground beef)
- 1 TBS. chili powder
- 1/4 tsp. garlic powder
- 1/4 tsp. onion powder
- 1/4 tsp. crushed red pepper
- 1/2 tsp. paprika
- 1 tsp. salt
- 1/4 c. cilantro, chopped
- 3/4 c. prepared salsa
- 1 can black beans, drained and rinsed
- 4 extra large flour tortillas (9" or 10" size)
- 2 c. Mexican blend shredded cheese
Mix together all ingredients except the tortillas and cheese. In a 9 inch spring form pan place one flour tortilla. Layer with a third of the meat mixture. Sprinkle 1/2 c. of cheese. Repeat layering with a tortilla, meat mixture and cheese two more times. Put fourth tortilla on the top. Sprinkle the last of the cheese on top of tortilla. Bake at 350 degrees for 30 minutes. Serves 6.
