Try this twist on Mexican night with taco egg rolls:
1 pound ground beef
2 tbsp. taco seasoning
Egg roll wrappers
1-2 cups cheddar cheese, shredded
Preheat oven to 375º. Cook and season the ground beef. Add in the cheese and stir until melted. On each egg roll wrapper, place a line of the meat diagonally across the square. Fold in the corners on either side of the line, and roll. Place in a dish with the seam on the bottom, so the roll doesn’t unwrap. Brush the tops with olive oil or egg whites and bake for 8 minutes. Flip, then continue baking for another 7 minutes.
