Taco casserole

When it comes times to make dinner, I am already exhausted from my day starting at 6am. I want to make something easy. If it is healthy, well, that is a plus. I would think that other single mothers out there agree with me. Here is what I came up with when I wanted to fix something like tacos, but much easier. The greatest thing of all: it freezes well!
You need:
1) 1 pound ground beef
2) Taco seasoning packet
3) 2 cans refried beans
4) Bag of Nacho chips
5) ½ jar salsa
6) ½ head of lettuce
7) 1 cup of shredded mild cheddar chesses
8) 1 can of black beans
9) 1 cup of water
10) Sour cream and other stuff you want to top it with
Directions:
Brown the ground beef and then add the taco seasoning. Add the water and simmer. Next, is the can of black beans (This step is optional. I like to add beans because I like the way they add a little zip.) Next, crunch up some nacho chips and fill the bottom of an oven safe pan that the casserole will be baked in. Then add salsa, meat, beans and cheese. Bake the casserole for 15 minutes at 400 degrees. Serve with sour cream on a bed of lettuce. You can serve it or freeze it for later!
