Philadelphia has its cheese steaks and chocolate covered pretzels, North Carolina has its barbecue and chess pie, New York, egg creams, street food, and even its own cocktail, the Manhattan. It seems every state is defined in some part by its food and ethnic origins. The more diverse the background of the region's original settlers, the more varied its cuisine. RI is no exception, plain speaking Yankee ingenuity established many of its most famous and favorite sugary indulgences, frozen desserts in a glass.
Coffee Cabinets and Coffee Milk - Coffee (pronounced 'kaw-fee') cabinets are coffee milk drinks with coffee ice cream added. Plainly speaking, called a 'cabinet', because that is where the mixer was kept... in the kitchen cabinet. Ask for a coffee or chocolate milkshake in Rhode Island and that's just what you'll get, milk with sweet coffee or chocolate syrup, no ice cream.
Coffee Milk was proclaimed the "Official State Drink of Rhode Island" in 1993, trouble is 10 miles outside the state, no one knows what you are talking about. Coffee milk is made with 8 oz of cold milk and 2 tablespoons of coffee syrup, preferably Autocrat or Eclipse coffee syrup sold in many local groceries, but impossible to find outside Rhode Island. When native Rhode Islanders move away, they stock up when they visit or have family send them their coffee syrup supply.
