Preparation:

  1. Place bacon in large sauté pan and set to medium heat. Cook until crispy about 3-4 min. Remove bacon from pan and place on paper towels to drain, while leaving the bacon fat in the pan.
  2. Add onion to the pan with the reserved bacon fat. Sweat onions for 1-2 min until translucent. Add garlic, cook for 1 min.
  3. Stir in sweet potatoes and butter, cover and cook until potatoes are tender, about 7-10 min. Stir occasionally.
  4. When potatoes are tender and slightly browned, add chopped thyme, cooked bacon, and season with salt and pepper to taste. Serve.

Chef’s Notes:

For a healthy version of this dish replace the bacon with 1# of shitake mushrooms sliced, and substitute olive oil for butter.
