All the bacon goodness in this hash will make you forget what you ever saw in potaoes.
Sweet Potato Hash
Yield: 4 servings
Time: 20 min.
Ingredients:
Sweet potato, peeled, medium diced 2 ea.(large)
Onion, yellow 1 ea.
Bacon, apple-wood smoked, cut into 1/4 in. strips 4 slices
Garlic, cloves, minced 2 ea.
Thyme, chopped 2 sprigs
butter, unsalted 1/2 tbsp.
Salt. kosher To taste
Black Pepper Ground To taste
Preparation:
- Place bacon in large sauté pan and set to medium heat. Cook until crispy about 3-4 min. Remove bacon from pan and place on paper towels to drain, while leaving the bacon fat in the pan.
- Add onion to the pan with the reserved bacon fat. Sweat onions for 1-2 min until translucent. Add garlic, cook for 1 min.
- Stir in sweet potatoes and butter, cover and cook until potatoes are tender, about 7-10 min. Stir occasionally.
- When potatoes are tender and slightly browned, add chopped thyme, cooked bacon, and season with salt and pepper to taste. Serve.
Chef’s Notes:
For a healthy version of this dish replace the bacon with 1# of shitake mushrooms sliced, and substitute olive oil for butter.
