This past weekend I was in need of an easy dessert that was also good enough to serve as a birthday dessert. I had a box of Devil's Food cake mix in the pantry and I was determined to use it. I found a recipe for Mississippi Mud Cake in my recipe box, and I thought it would be easy enough to adapt it and still use my boxed cake mix. The end result turned out just as good as I imagined.
You can't really go wrong with boxed cake mix. It was light, but maybe a little less rich and flavorful than the homemade cake would have been. I topped the cake with mini marshmallows and homemade chocolate frosting, which definitely added some richness to the dessert.
Mississippi Mud Cake1 boxed Devil's Food cake mix (plus oil and eggs)
mini marshmallows
sliced almonds (optional)
Frosting
1/2 cup sugar
2 tblsp butter
2 tblsp milk
1/4 cup chocolate chips
Prepare cake mix according to box directions. Pour batter into a greased 13x9" pan. Bake in a 350ยบ oven and take cake out of the oven 2 minutes before it is done. Sprinkle mini marshmallows over the top of the cake and bake an additional 2 minutes, or until the marshmallows are puffed up.
To prepare the frosting, bring milk, sugar and butter to a boil. Once sugar is dissolved, remove from heat and add chocolate chips.
Pour the frosting over the cake and sprinkle with almonds. Allow to cool, then cut and serve.
