Sweet & creamy cream cheese cookie recipe

Cream cheese refrigerator cookies are convenient because one can whip up the batter while making dinner, and then bake them whenever time permits. Baking is more relaxing when the household chaos has died down. Try this simple variation for a sweet and creamy treat. These days, we all need to try to celebrate the little things. Sweet Cream Cheese Refrigerator Cookie Recipe

Ingredients:

For the batter:

·         ½ cup butter, softened

·         1 cup sugar

·         1 egg, beaten

·         3 oz. cream cheese, softened

·         2 tablespoons plain yogurt

·         1 teaspoon vanilla

·         2 cups sifted all purpose flour

·         1/8 teaspoon baking soda

·         ½ teaspoon baking powder

·         ½ teaspoon salt

For the topping:

·         2 teaspoons sugar

·         1 teaspoon cinnamon

Yields-3-4 batches ( dependent on cookie size)

 

Directions: Beat the egg. Blend the butter, sugar, and egg together. Beat the softened cream cheese into the mixture with the yogurt and the vanilla until creamy. Then beat in the flour, the baking soda, baking powder, and salt.  Get a piece of aluminum foil. Roll the batter into a roll with a two inch diameter and wrap it well. Chill the dough 4 or more hours. When it is convenient, take the chilled dough out of the refrigerator. Preheat the oven to three hundred fifty degrees.  Mix the cinnamon and the sugar for the topping in a small bowl. Thinly slice the roll of batter into 2 inch cookies. Sprinkle the cookies with the sugary topping. Bake from 10-12 minutes.  Cool and enjoy a sweet treat.
