Suppose you have some leftover chicken wings

Check your freezer--you may have some chicken wings left over from Super Bowl Sunday. If you do, you have the makings for a pretty Valentine's Day dinner for two.

This recipe has an attraction in that it doesn't call for something that may be hard to find. They should be in your kitchen right now if you shopped recently, in fact. Got a can of tomatoes and a sweet bell pepper? You're all set!

CHICKEN WINGS MARGOT

Ingredients:

12 chicken wings, uncooked

salt, paprika and pepper

1 onion, chopped

1 bell pepper, sliced

1 cup diced celery

1 can of diced tomatoes, about 15 ounces

1 cup fresh mushrooms, sliced

Pinch of sugar

Brown the wings in cooking oil or butter and then add the chopped onions, celery and sliced mushrooms. Cover the pan and cook for 5 minutes, until the mushrooms, celery and onion have softened.

Add the tomatoes and seasonings, and finally put the wings back in the pot. Cover and cook for 20 minutes or until the wings are thoroughly cooked.

Serve this Valentine red dish with rice or pasta and follow with something yummy for dessert.

I got this recipe from my mother and I don't know where she got it, but I used to make it frequently. Just recently I rediscovered the recipe and if you are cooking for two it is nice and uncomplicated, with the added bonus that it tastes more so than it really is.

Since this dish has a sauce, crusty bread makes a nice addition and the popular light sparkling red wine such as Lambrusco is ideal to drink with it. If you aren't in the mood to deal with bread, I recommend the bakery at Sprouts for excellent artisan bread--several types, in fact.
