This may actually be the most popular appetizer-like food in the world. Created in the Asian countries (it seems each country in Asia has their own version), this grilled (or broiled) marinated and skewered chicken is simply downright tasty, especially when you dip it in the creamy peanut/coconut milk concoction they serve with it throughout Vietnam and Cambodia. You have no doubt watched Anthony Bourdain munch this on his television show No Reservations (the best food oriented show on the boobtube, in my humble opinion) and now you can make it at home.
This is also one of those great dishes where you can make a whole plate of it while swearing at your favorite foorball team and not worry about it getting cold as it is just as good whether it is burning your tongue or simply at beer temperature. Though most American recipes for Chicken Satay call for using the chicken tenderloin, I find this not only a waste of money (chicken tenderloins are not cheap) but downright sacrilege. Be authentic, dammit, and make it with skinless and boneless chicken thighs -- it's more tasty, it cheaper and it's the way it's supposed to be prepared!
Ingredients for Chicken Satay with Peanut Sauce (believe me, it won't feed enough):
- 1 Tbs. honey
- 1/4 cup soy sauce
- 2 tsp. toasted sesame oil
- 1 tsp. turmeric powder
- 1/2 tsp. chili powder
- 1 tsp. garlic powder
- 4 chicken thighs, skinned, boned and cut into strips
- Wooden skeweres, soaked in water
Steps:
- In a medium bowl whisk together all the ingredients, except the chicken thighs, until smooth.
- Add the chicken thighs to the bowl, cover and marinate at least 2 hours.
- Pre-heat your grill or broiler.
- Place the chicken on skewers and then place the skewered chicken on a broiling pan (if broiling).
- Place the chicken under the broiler (or on the grill) and broil/grill 5 minutes per side.
- Remove and place on a serving plate with the Peanut Sauce (recipe to follow).
Ingredients for Peanut Sauce:
- 1 tsp. garlic powder
- 1/2 cup chunky style peanut butter
- 2 Tbs. soy sauce
- 3/4 cup coconut milk
- 1 Tbs. honey
- 1 tsp. hot sauce
Steps:
- In a small saucepan over medium heat add all the ingredients and whisk until smooth and it just begins to bubble.
- Remove from the heat and spoon into a serving bowl. Place with the Chicken Satay and proceed to make a total pig of yourself!
