Super easy gluten-free roast recipe

Center roast and align veggies. Sprinkle with spices.

Super Easy Gluten-free Roast Recipe Ingredients: Roast meat, Veggies suitable for roasting (carrots, zucchini, onion slices, potatoes, etc.), Spices (salt, pepper, garlic)

Optional: Uncle Ben's Ready Rice

Place roast meat in the center of a 9 x 13 dish. Place veggies around roast meat, and onions on top of meat if desired. Sprinkle with salt, pepper, garlic, and other desired spices. Cover tightly (to retain moisture) with heavy duty aluminum foil. Cook at 325 degrees for 4 hours or until tender.

Cook covered for 4 hours at 325 degrees

The roast is done when it is tender and has a nice browning. This kind of cooking allows the meat to fall apart when it is done, and it is so tender and delicious.

A glass dish will probably work better than a metal dish. The glass would be easier to clean afterwards.

Pair with Uncle Ben's Ready Rice

An optional side dish to complete this meal is Uncle Ben's Ready Rice. The Original flavor is gluten-free, and ready in 90 seconds. Some flavors of Uncle Ben's ready rice are not gluten-free, so read the label to be sure. If you are following a low carb diet, check Linda's Low Carb recipes for a low carb side dish option.
