Super easy coconut curry recipe

Ingredients
1 can coconut milk
2 tbsp. red curry paste
2 broccoli heads
1 can chickpeas
½ tbsp. cornstarch
2 tbsp. cold water
1 tsp. garlic, minced
1 tbsp. olive oil

Instructions
In a skillet, add in the garlic and oil, cooking over medium heat. After a minute or so, add in the broccoli and cook for several minutes. Stir in the coconut milk, keeping at a simmer for about 6 minutes or until the broccoli starts to soften. Whisk in the curry paste until well combined. Drain and rinse the chickpeas, stirring into the skillet.

Bring to a boil. Slowly stir in the cornstarch, making sure everything is well combined. After one minute, reduce heat and stir as the sauce thickens. Remove from heat and serve.
